This delicious chicken recipe was mouth-watering enough to earn Alex D'Onofrio top honors in our 2020 recipe contest.
2 boneless skinless chicken breasts
1 Tbsp. plus 1 tsp. The Real Texas Style rub
2 Tbsp. The Real Tangy Tennessee sauce
1/4 c. shredded colby jack cheese
4 strips bacon
1 Tbsp. brown sugar
Pico de Gallo:
4 vine-ripe tomatoes, chopped
1/2 medium red onion, chopped,
2 green onions, white and green parts, sliced
1 Serrano chile, minced
1 handful fresh cilantro leaves, chopped
3 garlic cloves, minced
Juice of 1 lime
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt
Sprinkle bacon with brown sugar and 1 tsp. Texas Style. Bake at 425 degrees for approx. 15 minutes. Crumble and set aside.
While bacon cooks, combine ingredients for pico de gallo and set aside.
Season both sides of chicken with 1 Tbsp. Texas Style. Sear until internal temperature reaches 160 degrees (approx. 4-5 minutes per side).
Top chicken with Tangy Tennessee and shredded colby jack cheese. Broil just until cheese is melted.
Top with crumbled bacon and pico de gallo.
Serve with sweet potato fries and broccoli salad or other side(s) of your choice.
