This hearty one pan wonder is family-friendly and ready in under 30 minutes.
1 lb. ground meat (turkey, beef or pork)
2 large sweet potatoes, diced
1 medium onion, diced
1 red bell pepper, diced (or 4-5 tinkerbell peppers, sliced into rings)
2 cloves garlic, minced
1 c. chicken stock
1/4 c. The Real Tangy Tennessee sauce
1 Tbsp. The Real Texas Style rub
1 Tbsp. cumin
2 tsp. The Real Homestyle rub
1 c. shredded mozzarella cheese
Juice of 1 lime (optional)
Using a high-sided saucepan, drizzle olive oil and add garlic. Cook over medium heat about 1 minute or until fragrant. Add ground meat and brown until cooked through (approx. 7-8 minutes), using a spatula* to break up.
Add onion, pepper, Texas Style, Homestyle, cumin and Tangy Tennessee and cook 3-4 minutes, stirring frequently.
Add sweet potatoes and chicken stock. Cover and cook, stirring frequently, until most of the liquid has absorbed and potatoes are tender (approx. 10-12 minutes).
Remove from heat and top with mozzarella. Return cover and let stand until cheese is fully melted.
Top with cilantro and a squeeze of lime juice and serve.
